Julip Made Thanksgiving sweet potato miso butter side dish3 There are several dishes at Thanksgiving that we never mess with (turkey, gravy, stuffing) and most of the major side dishes that we stick to our traditional flavors.  However, every year around this time of year I experiment a bit with the classics to find a better twist.  These miso butter sweet potatoes with scallions are a pan-licking result of these experiments.  The umami and saltiness from the miso, mixed with the buttery warmth makes the sweet potatoes irresistible.  This is also one of the simplest Thanksgiving side dishes and uses only 4 ingredients.

(serves approximately 8 for a side)

  • 2 tablespoons butter, melted
  • 2 teaspoons miso paste (I used Shiro miso)
  • 4 large sweet potatoes, peeled and cut into approximately 1 inch cubes
  • bunch of scallions, diced

  1. In a large saucepan, bring water to a boil and add sweet potatoes.  Cook until tender when pierced with a fork.  Strain and return to the pan. 
  2. While the sweet potatoes are boiling, mix the melted butter and miso paste.
  3. Pour the miso butter over the sweet potatoes and mix well.
  4. Sprinkle the scallions over the sweet potatoes to serve. 
  5. Enjoy!

  1. The sweet potatoes look great, but I am LOVING the potholders! Makes me want to take a trip to Michael's for crafting supplies!
