

Ingredients (serves 2):
- 1 sweet potato, peeled
- 2 carrots, peeled
- 1 tablespoon olive oil
- 1.5 teaspoons cumin
- 1/2 teaspoon chipotle pepper powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1.5 tablespoons maple syrup


- Preheat the oven to 350 degrees Fahrenheit.
- Cut the carrots and sweet potatoes into sticks.
- In a mixing bowl, mix the carrots and sweet potatoes with the olive oil, cumin, chipotle pepper, salt, and pepper. Rub in the oil and spices to the veggies with your hands.
- Spread out the veggies on a baking sheet and bake for approximately 10 minutes.
- Remove from oven and drizzle the maple syrup over the veggies.
- Return to the oven for another 10 minutes or until veggies can be pierced
- Enjoy!
