Spicy & Sweet Cumin Roasted Root Veggies

Julip Made spicy sweet cumin roasted root veggies5 For weeknight meals, I am always looking for easy-to-make sides to accompany a piece of seared salmon or roast chicken.  These spicy and sweet, cumin roasted root veggies are not only easy to make, but taste like fries with  twist.  They can also be made in bigger batches and frozen for future meals.

Ingredients (serves 2):
  • 1 sweet potato, peeled
  • 2 carrots, peeled
  • 1 tablespoon olive oil
  • 1.5 teaspoons cumin
  • 1/2 teaspoon chipotle pepper powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1.5 tablespoons maple syrup

  1.  Preheat the oven to 350 degrees Fahrenheit.
  2. Cut the carrots and sweet potatoes into sticks.
  3. In a mixing bowl, mix the carrots and sweet potatoes with the olive oil, cumin, chipotle pepper, salt, and pepper. Rub in the oil and spices to the veggies with your hands. 
  4. Spread out the veggies on a baking sheet and bake for approximately 10 minutes.
  5. Remove from oven and drizzle the maple syrup over the veggies.
  6. Return to the oven for another 10 minutes or until veggies can be pierced
  7. Enjoy!
