Quick Bites: Salmon Blini with Dill Crème Fraîche

Julip Made salmon blini quick bites4 Salmon, dill, and crème fraîche are one of my favorite flavor combinations.  They have a fresh taste, are filling, but not heavy, and make the perfect appetizer combo.  Place them on top of a blini and you have the perfect serving surface.  See below for ingredients and recipe...

  • 1/3 cup buckwheat flour
  • 2/3 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 large egg
  • 3/4 cup milk, plus more as needed for batter to reach correct consistency
  • 1 stick unsalted butter, clarified
  • 1/3 cup crème fraîche
  • dill sprigs, finely minced
  • homemade cured salmon (I often use this recipe), sliced into 1/4 inch pieces

  1. Combine flour (both kinds), baking powder, and salt in a large mixing bowl. 
  2. In a smaller bowl, whisk egg, milk, and 1 tablespoon of clarified butter. 
  3. Slowly whisk liquid mix into dry mix until batter reaches correct consistency, which should be a very-thin pancake-like batter consistency. 
  4. In a large skillet, heat 1 to 2 tablespoons of clarified butter on medium-low heat.
  5. Add a generous teaspoon of batter at a time.  Cooking each blini for approximately 1 minute 30 seconds per side or until golden brown.
  6. Place blinis on a plate with a paper towel to let cool.
  7. Mix the crème fraîche with the dill.
  8. Once cool, place a square of salmon on top, a dollop of crème fraîche and then garnish with dill.
  9. Enjoy!
