Mint Grapefruit Granita

083 Mint Grapefruit Granita is the perfect summer palette cleanser, dessert, or cocktail. I served it in bite sized portions on large soup spoons at my summer dinner party for a between courses palette cleanser. I think it would also be delicious mixed with a little gin for a boozy summer slushy. See after the jump for ingredients and recipe...

Ingredients:
  • 1 grapefruit, sectioned
  • handful of mint leaves, minced
  • 2 tablespoons sugar
  1. In a food processor, lightly blend grapefruit, mint, and sugar.
  2. Pour in a baking dish, covering bottom with less than 1/2 an inch.  
  3. Freeze for 1 hour.  Remove from freezer and scrape frozen parts towards center with fork.  Place back in freezer and refreeze for another hour. 
  4. To serve, scrape again into flakes with a fork.
  5. Enjoy!
