Shaved Asparagus and Parmesan Salad with Citrus Dressing

004 This is a recipe I created for the Mother's Day Brunch I hosted recently.  With the overabundance of asparagus coming from my parent's garden, I've been trying to find more creative ways to use it up.  This is a no-cook salad that due to the thinness and freshness of the shaved asparagus can be eaten without any heating.  See after the jump for ingredients and recipe...
006 Ingredients:
  • bundle of asparagus, washed and shaved
  • 1 tablespoon Parmesan per serving, shaved
  • 1 lemon, juiced
  • 1/2 grapefruit, juiced
  • 1 tablespoon olive oil
  • salt and pepper
  1. Shave asparagus using these instructions from Food 52 here.  Place in a bowl and set aside.
  2. In a small bowl, whisk together the lemon juice, grapefruit juice, olive oil, and salt and pepper. 
  3. Pour dressing over the asparagus and toss to coat.
  4. To serve, using tongs, twirl a little nest of asparagus and place in the middle of each plate.  Using a spoon, drizzle a little of the excess dressing on top.
  5. Sprinkle shaved Parmesan on top and salt and pepper to taste.
