Spring Pea and Basil Pasta...

spring pea and basil pasta This is one of my favorite go-to spring snacks/ lunches because of its fresh taste and ease of making. I also have an amazing basil plant that I have been nursing all winter. Whenever it needs a trim, I find myself making this dish.
Ingredients and recipe after the jump...

048 Ingredients:
  • Pasta (I often use orzo)
  • olive oil
  • 2 garlic cloves, minced
  • peas (frozen or fresh)
  • basil, minced
  • Salt and pepper to taste
  1. Heat large pot of water with a dash of salt for pasta.
  2. While water is heating, in separate pot, heat olive oil over  medium-low heat.  Add garlic and briefly saute until fragrant.
  3. Reduce temperature even lower and add peas.  Heat until peas are defrosted and heated all the way through.
  4.  Once pasta is cooked and drained, add to garlic/ pea mix.  Drizzle some olive oil over top.
  5. Sprinkle minced basil, salt and pepper to season.  Enjoy!
