Pomelo Mojitos...

101 First thank you all for your wonderful heart warming words, support, and congratulations on my 1 year blogiversary.  It really means the world to me.  Second, it is Friday and time for Happy Hour!  Last week at the market next to the grapefruit, I spotted a "green" grapefruit aka Pomelo.  Of course I had to buy and then the next logical thing to do was to make a drink out of it.  It has the bitterness of a grapefruit, but is a little sweeter and milder making it perfect for cocktails.  Read ingredients and recipe after the jump...
105 Ingredients:
  • 1 large pomelo, cut in half, scoop out wedges, and squeeze excess juice
  • handful of mint leaves
  • 2 tablespoons raw sugar
  • 1/2 ounce lime juice per rink
  • 1 ounce rum per drink
  • 2 ounce freshly squeezed pomelo juice
  • 1 ounce freshly squeezed orange juice
  1.  In shaker, muddle mint leaves and sugar.  
  2. Add in pomelo wedges and muddle some more.  Mix in lime juice, rum, pomelo juice, and orange juice.
  3. Shake and pour over ice.
  4. Garnish with citrus wedge and enjoy!
