Beet, Arugula, and Goat Cheese Pizza...

beet goat cheese arugula pizza I love beets as evidenced by this recipe (if this recipe wasn't enough) and I love adding arugula to my pizza (if this recipe wasn't evidence enough).  They taste good, they are good for you, roasting them makes your house smell amazing, and they can be used in infinite combinations for a yummy bite.  Instead of our usual burger or steak Friday, we were craving pizza and so happened to have some beets in the fridge that needed to be used up.  022 Ingredients and recipe after the jump...

  • pizza dough (we buy ours from Trader Joe's)
  • 1 medium onion, julienne
  • 3-4 beets, scrubbed and greens cut off (reserve these for a yummy salad later)
  • 3 cloves garlic minced
  • goat cheese, crumbled
  • arugula, enough to cover your pizza
  • olive oil
  • salt and pepper
  1. Preheat oven to 375.  Place beets in baking dish and drizzle with olive oil, coating and salt. 
  2. Roast for 30-45 minutes, or until beets are tender when pricked with  fork.
  3. Peel beets and cut into rounds or wedges or dice depending on how you want them to cover your pizza.
  4. While beets are roasting, saute onion over medium heat in cast iron skillet until caramelized. 
  5. Roll out pizza dough using floor so it doesn't stick into a circle about the size of your skillet pan.  
  6. Drizzle olive oil in pan and put dough inside over medium to low heat.  
  7. Place caramelized onions, garlic, beets, and goat cheese on top of dough.
  8. Increase oven temperature to 400. Place pizza in oven and cook for 12-15 or until crust is done and a wonderful golden brown color.
  9. Top with arugula.  Drizzle with olive oil and flavor with salt and pepper to taste.  Enjoy!

  1. You have managed to combine everything I love in the food world into one thing. Pizza. Beets. Goat Cheese. Greens. Though, honestly Julie, you need to double the amount of goat cheese. Unacceptable.

  2. Wow, that pizza looks amazing! I love that combination of flavors—the earthiness from the beets, the tang from the goat cheese, and the spiciness from the arugula—and I bet it's fantastic on a pizza. Mmm.

    Hmm, favorite pizza toppings. If we're talking pizzeria pizza, either pepperoni and cheese (with regular red sauce) or broccoli and tomatoes on a white pizza (a vestige from my former vegetarian days). If we're talking about specialty pizzas, I would eat anything really, though hot Italian sausage is definitely high on that list, as well as ricotta. One of the more unusual but delicious pizzas I've had has been a potato pizza.

  4. I actually just bought a thing of pizza dough to make the argula pizza recipe I found on the Everygirl and am definitely going to try making it in a skillet! That is such a great idea. My bf's family owns a pizzeria and he has been making pizza since he was a kid so one day we are planning on putting a pizza oven in our kitchen. Gotta utilize those skills ;)
