Sriracha Lime Quinoa...

sriracha lime quinoa This is a healthy, yummy, quick, easy, simple (I could keep adding in more positive adjectives here) meal.  Quinoa is one of my new go-to additions to dinner because not only is it healthy (high protein content)  and relatively quick to make, but it can act as a base to layer on flavors.  It can also be used in a pinch for those "everything, but the kitchen sink" dinners by chopping up leftover veggies and mixing it in.  My recipe combines sour and spice for a kick-a** meal. 
005 Ingredients:
  • 1 cup quinoa
  • 1 1/2 cup stock (chicken or veggie)
  • 1 tomato, medium dice
  • 1/2 red onion, medium dice
  • 1 avocado, medium dice
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • sriracha (as much as you can handle)
  • salt & pepper to taste
  • handful of cilantro (I didn't have any, but would recommend adding this)
  1. Cook quinoa according to package instructions.  Once cooked, let cool.
  2. When cool, add tomato, red onion, avocado and cilantro. 
  3. In a separate boil, mix lime juice, sriracha, and oil.
  4. Drizzle this over the quinoa/ veggies.  Toss to mix well.
  5. Serve with fish or other protein. In this case seared salmon also with sriracha.  Can you tell I like it hot?

  3. JULIE! This pictures look amazing!!! They need to be on a restaurant website. Wow. And Quinoa is one of our favorites too. We have it a couple times a week. I can't wait to try this recipe!
