- arugula
- 8 figs, sliced in quarters
- burrata cheese, sliced
- 1/2 pomegranate, seeded and reserve juice for dressing
- olive oil, dash
- red wine vinegar, dash
- salt and pepper for tasting
- Lightly brown figs under the broiler for a few minutes. You can serve them raw too, but I like the caramelizing effect this has.
- Mix the figs, arugula, pomegranate seeds, and burrata in a large bowl.
- Splash a dash of olive oil, red wine vinegar, and the leftover pomegranate juice on top of the salad.
- Salt and pepper for taste and toss.

One of my favorites is braised chicken. I love braising legs using the late season dry farmed tomatoes, lots of onions, red wine, then tossing in some olives at the end. It's so south of France in summer, but having something bubbling away on the oven feels distinctly Fall!
ReplyDeleteYum...love me some figs. So scrumptious!

ReplyDeleteSo, burrata is one of my favorite cheeses. When I was living in Florence, I ate it by the fistful (hence the extreme weight gain while there). I haven't had it quite as good since I left, but you've left me with my mouth watering now. I MUST have this salad.
