Weekday Meal Wednesday... Home-made Guacamole

Not trying to toot my own horn or anything, but I make a pretty spectacular guacamole.  It isn't exactly traditional and has some extra ingredients, but is delicious and can basically be eaten on its own.  I know I do... by the bowlful.  This particular evening we made chicken tacos with black beans and chili feta to go along with it.

  • garlic, a few cloves, minced
  • two tomatoes, diced
  • red onion, diced
  • roasted corn on the cob ( I cheated and got a bag from Trader Joe's)
  • lime
  • cilantro, minced
  • salt and pepper to taste
  • 4 avocados, sliced

  1. Cut the avocado in half.  Take out the pit.  Slice within skin both ways. Scoop out avocado and put in bowl.
  2. Mix in the corn, tomato, onion, cilantro, garlic and squeeze a dash of lime juice.  Mash with spoon.
  3. Season with salt and pepper.
  4. Eat out of bowl (or add to taco if you aren't avocado crazy like me).

What meal or dish do you make really well?  Or what dish could you eat all on its own without any sides?  Does anyone else piss of their significant other by taking too much time taking food photographs?

  1. I love guac but have never been brave enough to make it myself. Maybe I'll give this one a shot. It could be my new beach house fave :) xoxo

  2. I love guacamole! Just made some last night.

  3. Hmm I think you may have just inspired me, I've been looking for a guacamole recipe for awhile now :)

  4. Guac has my heart. so good.

and YES. my poor husband is always starving with a cold plate of food after my picture sessions :)

  5. Guac is one of my specialties too! Love the addition of roasted corn...mmmmm

  6. Guac is my weakness, I make this all the time. Might need to make it for dinner :)

  7. oh gosh.
    this seriously looks amazing.
    i LOVE guacamole!
i'm for sure going to make this.
thank you for sharing this recipe!!!

  8. Oh man I bet that was great!! I loooove guacamole!!

  9. LOL! My husband no longer waits until I'm done taking food photos before eating. He just dives right in and I'm left with my cold food post pictures! There are a few things I'm not good at: One is making gaucamole and the other is an over easy egg. I leave both those to the husband who more than makes up for my lack of skills. But I make a mean risotto!

  10. I love the corn addition. I'm craving chipolte now!!
