Weekday Meal Wednesday... Caprese Salad

Caprese salads are one of my favorite summer salads.  When it is is really hot out, even though it is just a salad, sometimes I eat it as a meal by adding some bread and salami.  One thing I don't like about traditional caprese salads (by don't like I mean I will still gobble up) is the whole basil leaves scattered on top.  I prefer the basil flavor mixed into a pesto with the yummy nutty pine nut flavor.  Also, if you make extra and want to eat the caprese as a full meal, you can spread it on bread and turn them into crostinis!

  • 1 large heirloom tomato, sliced
  • 1 large ball of mozzarella, sliced into rounds
  • aged Balsamic vinegar
  • salt and pepper
**I also added cucumber because my dad has just brought some just-picked-from-the-garden cucumber from their house out in VA.**
    For the Pesto:
    • several handfuls of fresh basil
    • a few sprigs of oregano
    • 2 cloves garlic, skins off
    • 1/4 cup pine nuts
    • 1 teaspoon anchovy paste
    • 3-4 tablespoons olive oil
    • salt and pepper
    1. Blend the ingredients for the pesto in a food processor starting with 1 tablespoon of olive oil and slowly adding more to achieve the consistency you want.  I like a rougher pesto with a little extra olive oil so it drizzles over the salad. 
    2. Drizzle each plate with some pesto and balsamic.  
    3. Layer the tomato slices and mozzarella.  Salt and pepper.
    4. Drizzle the tomato/mozzarella stacks with more pesto and balsamic.  Enjoy!

        1. In the summer time, I love making panzanella. You basically toast up cubes of baguette drizzled with olive oil, seasoning and fresh garlic (like making croutons), then mix with vegetables like tomatoes, cucumber, roasted corn, roasted summer squash, chopped basil, and a lemony vinaigrette. It has SO much texture and color and tastes DELISH.

        9. Yum! I love caprese salad - the basil in my garden is growing like crazy, I'm just waiting for my tomatoes to come in! they are grape tomatoes so I will do mini-caprese salad when the time comes, definitely will have to chop up the basil!
