Weekday Meal Wednesday... Bacon, Goat Cheese and Arugula Potato Salad

With the popularity of last week's meal and my attempts to eat a wee bit healthier for my impending vacation, here is another "salad" recipe for y'all.  Note that I am not trying to say bacon and goat cheese are healthy, but in moderation and combine with other veggies, it is a healthier option than say... a burger.  This recipe was also adapted from Catherine Walther's Raising the Salad Bar.  If you love salads, and not just the average ceasar or garden variety, I would highly recommend getting this book.

  • 3-4 medium red potatoes (cleaned, but skin on)
  • 4-6 strips of bacon (less if thick cut, more if thin), cut into 1/2 inch strips
  • 1 large tomato, medium dice
  • a few handfuls of arugula/ spring mix
  • a handful of kalamata olives (pitted or unpitted)
  • sprinkle of crumbled goat cheese
  • salt and pepper to taste
  • **add diced onions if you want as well, I didn't this time, but they can add a crunch**
for Balsamic viniagrette...
  • 2 tablespoons balsamic viniagrette
  • 4 tablespoons EVOO
  • 1 teaspoon dijon mustard
  • 1 teaspoon maple syrup (not the plastic bottle kind, use the good Canadian stuff!)
  • salt and pepper to taste

Hi, my name Odin and I have an addiction to bacon.  I also somehow manage  to remove a layer of skin from my nose.  Mommy's still not sure how...
  1. Place potatoes in a medium saucepan, cover with salted water and place on medium-high to boil.  Once potatoes can be easily pierced by a fork, remove and drain. Set aside to cool. 
  2. Meanwhile, sautee the bacon over medium heat until crispy.  Remove from skillet with slotted spoon and set on a paper towel to drain the oil. **Keep bacon plate away from edge of counter where wandering noses can reach.**
  3. Add all dressing ingredients to medium bowl and whisk until completely mixed.
  4. Once potatoes are cool, dice into 3/4 inch wedges and season with salt and pepper.  
  5. Combine potatoes, tomatoes, arugula, and olives and drizzle the dressing over.  Mix.
  6. Serve and top with bacon and crumbled goat cheese.
Super easy... super yummy.
