Weekday Meal Wednesday... First Edition

Welcome to the first edition of my first weekly series... Weekday Meal Wednesday.  In order to save money and time, the Boy and I sit down on Sundays and plan out a rough menu for the week. Typically the weekdays are filled with quicker easier recipes that we have tested and know will be foolproof meals for after work.  On the weekends, we like to try out new recipes or recipes that take a little more effort or time like braises or roasts.  In this series, I'll be sharing those easier weekday meals with you all in hopes to give you some inspiration as well as to get ideas from you all via the comments.  The following recipe is a go too meal and can really be made with anything you have in your veggie drawer.
Spicy Peanut Noodle Salad

  • Veggies, diced (I used onion and green pepper here, but really anything works... red pepper, bok choy, carrots, edamame, etc...)
  • Noodles (any kind, but I find thinner, longer kinds that entangle the veggies better so you get more in each bite)
  • Trader Joe's Asian Style Peanut Vinaigrette (I also make a home made Spicy Tahini Vinaigrette when I am out of the TJ's)
  • Add ins- Sometimes I like to add in sesame seeds, peanuts, or scallions for extra flavor and crunch.
Note:  Cook time for veggies also depends on what you are using.  Vinaigrette's are very easy to make, but I like to use the TJ's because not only is it delicious, but it saves me time which is the whole point of the easy weeknight meal!
  1. Prep veggies.
  2. Saute veggies in peanut oil or vegetable oil, adding in order of cook time.
  3. Meanwhile, cook noodles according to directions on box. Drain.
  4. When noodles and veggies are fully cooked, mix together in large bowl with vinaigrette.
  5. Sprinkle with sesame seeds, peanuts, or scallions.

We also added left over BBQ Pork to the meal for a little protein, but if you add enough veggies and beans or tofu, the noodle salad can be enough for a full meal.  Enjoy!

  2. Thanks Alena. I've been pretty consistent with it, but there are always those nights where we cave and go for some Chipotle or Chopt. Also, I'm not sure about the Bethesda Trader Joe's, but the Foggy Bottom one always gives me inspiration for easy meals!
